Glucono delta-lactone (GDL) is a naturallyoccurring food additive with the E number E575used as a sequestrant, an acidifier, or a curing, pickling, or leavening agent. It is a lactone (cyclic ester) of D-gluconic acid. Pure GDL is a white odorless crystalline powder.

Glucono delta-lactone (GDL) is commonly found in honey, fruit juices, personal lubricants, and wine[citation needed]. GDL is neutral, but hydrolyses in water to gluconic acid which is acidic, adding a tangy taste to foods, though it has roughly a third of the sourness of citric acid. It is metabolized to glucose; one gram of GDL yields roughly the same amount of metabolic energy as one gram of sugar.

Upon addition to water, GDL is partially hydrolysed to gluconic acid, with the balance between the lactone form and the acid form established as a chemical equilibrium. The rate of hydrolysis of GDL is increased by heat and high pH

Chemical PropertiesThis product is white crystalline or crystalline powder, odorless, taste sweet after bitter, was sour. Melting point 150 ~ 154 (decomposition). Soluble in water (room temperature, 60g / 100mL), slightly soluble in B (1g / 100mL), insoluble in ether. In  the aqueous solution of gluconic acid and lactone in the equilibrium  solution, the new preparation of 1% aqueous solution pH value of 3.5, 2 h  after the 2.5.

Applications of GDL

1. Tofu coagulant

Tofu produced by GDL is white and tender, no bitter taste, no protein loss. GDL is partially hydrolysed to gluconic acid, with the balance between the lactone form and the acid form established as a chemical equilibrium. The rate of hydrolysis of GDL is increased by heat and high pH .

2. Gelling agent for dairy products

Mainly used in the production of yogurt or cheese.

3. Quality improver

GDL can be used in pork luncheon meat and canned pork, to improve the effect of colorant.

4. acidifying agent

GDL can be used in fruit syrup or jelly with flavors as vanilla extract, chocolate, banana, etc.
