Sodium Alginate (E401) is extracted from brown seaweed. It is used as a stabilizer for ice cream, yogurt, cream, and cheese. It acts as a thickener and emulsifier for salad, pudding, jam, tomato juice, and canned products. It is a hydration agent for noodles, bread, cool and frozen products. In the presence of calcium and acid mediums, it forms resilient gels. It is a cold gelling agent that needs no heat to gel. It is most commonly used with calcium lactate or calcium chloride in the spherification process.

Sodium alginatealso called as Algin, is a kind of white or light yellow granular or powder, almost odorless and tasteless. It is a macromolecular compound with high viscosity, and a typical hydrophilic colloids. Because of its properties of stability, thickening and emulsifying, hydratability and gelling property, it is widely used in food, pharmaceutical, printing and dyeing, etc.

Usages in Food Industry

 

1. Stability: ice cream,cream and cheese etc.
Sodium alginate is used to replace starch, gelatin as the stabilizer of ice cream, controlling the formation of ice crystals and improving the flavor of ice cream. It can also stabilize mixed beverages like sugar ice cream, sherbet,frozen milk etc. Many dairy products such as refined cheese,whipped cream, cream cheese, rely on the stabilization of sodium alginate to prevent the attachment of food and packaging materials. If it is used as the covering of milk on ornaments, the sodium alginate can make it stable and preventicing sugar pastry cracking.

2. Thickening & emulsifying: Salads,pudding,jam,tomato juice, canned products,etc.
Sodium alginate is used as thickening agent of salad-dressing, pudding, jam, ketchup and canned products, to enhance the stability of products and reduce fluid exudation.

3. Hydration:Noodle,vemicelli,bread,confectionery,cool and frozen products.
Adding in sodium alginate while making fine dried noodles, vermicelli, rice flour can improve the adhesion of products tissue, making them with high tensile strength, curvature, reducing the end breakage rate, especially obvious for low gluten flour. Adding in bread, cakes and some other products can improve the uniformity and water retention ability of these products internal organizations, and extend the storage time. Adding in the frozen dessert products can provide a protective shield for hot fusion, improve flavor loss and the melting point.

 

4.Gelating:frozen foods imitated foods and various gel foods,protective cover for fruits,meat,poultry and aquatic products,sugar coating,stuffing etc.
Sodium alginate can be made into various gel food. It can be used to maintain good colloid form, without drainage or shrinkage, suitable for frozen food and man-made imitation food. It can also be used as layers of protective coating to cover fruit, meat, poultry and aquatic products, making them without direct contact with air, thus extending the storage time. Added in sugarcoating of bread, stuffed filling, cover layer of dessert, canned food, etc, it is a good type of self-curing forming agent, making products maintain the original shape at high temperature, freezing and acidic media. 1. In food industry
A: Stabilizer
As a stabilizer of ice cream replacing starch and carrageenan, Sodium Alginate can avoid of ice crystal and make the product tas ty. It also applies to the mixed drinks, such as ice looly, iced fruit juice and iced milk, etc. When adding some into dairy products like refined cheese, canned cream and dry cheese, the final product will not stick to the package. Moreover, Sodium Alginate can keep the product fine and avoid of splitting open if it is used as a cover of milky food.

B: Thickener and emulsion
Sodium Alginate can raise the products stabilization and decrease the liquid out when it is used in sala (a cold dish)flavoring, pudding (a sweet pastry) jam, tomato ketchup and the canned products.
 

C: Hydration

Salve, tablet and drugs Using of the thickener and coacervation, Sodium Alginate can be made into all kinds of additive of medicines, such as Sulphur Paste mixed by Sodium Alginate and wool oil which can treat skin disease. Sodium Alginate can be mixed with sulphanilamide into eye ointment or with benzene mercury acetate into contraceptive jelly. If Sodium Alginate used as capsule for intestines, it can cause the medicine staying and absorbing longer in the intestines then have a good curative effect.

3. in printing and textile industry 
A: printing agent
It has been a long history that sodium alginate is used in starching, finishing and printing, mainly in printing. It, as a reactive dye printing agent, has a special property. During reaction of fibre and reactive dye, the dye is fixed in fibre and printing agent do not attend this reaction, Otherwise,the agent will be fixed in the fibre and make it hard, fragile and bad color, if you use Sodium Alginate as a printing agent, it not only affects the dyeing reaction but also makes the product outline clear, color bright, feeling smooth. This agent is also suitable for cotton, wool, silk and synthetic fibre. The products of medium and low viscosity fit for the printing requirements by net or roll style. Actually the printing agent mixed with low-viscosity Sodium Alginate is stabler than with the other viscosity, which is the results to produce a high content of printing agent. This agent will make a dense cover during drying and raise dyeing. High quality sodium alginate sizing can meet special, requirement of spray-printing.
