Naturally occurring in soil as a result of bacterial fermentation, Natamycin, also known as Pimaricin, was discovered by DSM scientists more than 50 years ago. It has been on the market since 1967 and is predominantly used for food preservation and in very rare cases as a treatment for fungal infections.

Natamycin was first discovered in a soil sample near Pietermaritzburg, South Africa, in 1954, and has been widely and safely used as a natural food preservative for nearly 50 years.

Usages of Natamycin

1. Natamycin food use:

Natamycin is a natural, broad-spectrum, high security and other filamentous fungi, yeast and mold inhibitors, E235 can not only inhibit the fungus, but also to prevent the production of mycotoxins. Natamycin harmless and unlikely to be absorbed by the human digestive tract, and microbial resistance is difficult to Natamycin, E235 and because low solubility characteristics, the surface is usually used in food preservation. Natamycin is currently the only anti-fungal microbial preservatives. 1997 China Ministry of Health formally approved the E235 as a food preservative. Currently E235 has been widely used more than 50 countries. Natamycin mainly used in dairy products, meat products, fermented wine, beverages and other food production and preservation.

2. Natamycin medicinal use:

Natamycin is used to treat fungal infections, including Candida, Aspergillus, Fusarium, etc., Natamycin is also used as eye drops or oral agents, in these applications, the human body to absorb less of Natamycin. Orally, the basic is not absorbed from the gastrointestinal tract, so the system does not apply to Natamycin infection drugs.

Potencial Benefits

Natamycin are effective anti-microbial agents. Using Natamycin as food preservatives can:

1. Enhance the quality of food product, and significantly extend the shelf life of foods by preventing yeast and mould spoilage

2. Reduce product being recalled resulting from spoilage (and reduces manufacturing costs)

3. Replace or partial replace chemical preservatives and meet consumer demand for food preserved with natural ingredients.

4. Have no adverse flavour to foods

5. Have stronger inhibitability compared to sorbic acid

6. Prevent formation of potentially carcinogenic mycotoxins

7. Cover a very broad spectrum of activity -- most yeasts and moulds are sensitive to very low levels of the preservative (<1 - 20 ppm)

8. Do not act against bacteria. This makes it useful for food products such as cheese and dry sausages in which bacteria are key to the ripening process

9. Remain on food surface for a long time where contamination usually occurs

10. Be proven to be a safe antimycotic agent.

Applications
Natamycin can effectively inhibit most yeasts and moulds, without affecting food flavor.
Dipping the cheese in 300-500mg/L natamycin suspension for 2 minutes can extend the shelf life without affecting the natural ripening of cheese.
Spraying the suspension of natamycin with 300-500mg/L on the surface of baked food or mooncake, it will extend the shelf-life effectively.
Adding 5-10mg/L of natamycin in brewed wine could inhibit the fermentation caused by yeasts in order to extend the shelf-life.
