Maltitol is a refined disaccharide alcohol, it is made from starch through the process of hydrolysis and hydrogenation. It is a colorless, transparent, viscid thick liquid with neutral reaction; it is easily soluble in water; its sweetness is slightly lower than that of sucrose; the sweetness gives a gentle and pleasant sensation; it has the characters of low-calorie, good heat-resistance, acid-resistance, unfermentable and stable humidity etc.; it will not cause the blood glucose level to rise in human body. It is a new function sweetener widely used in food, medicine and healthy food industries.
Maltitol obtained by the hydrogenation of maltose, sugar alcohols, liquid and crystalline it has two products.
By crystallization of high maltitol, maltose content to reach more than 60% as well. Maltitol low-calorie, low-calorie,
almost no decomposition in the body, suitable for everyone, but can be used as diabetes, especially patients and fear of fat people.
Maltitol is a sugar alcohol (also called a polyol) with very similar properties to sugar but less calories. Like other sugar alcohols (xylitol, mannitol etc) it has a slightly laxative effect and it is not recommended to consume more than 50 gm per day. It occurs in nature, chicory leaves contain a small amount, and as such it is sometime described as a natural sweetener. Nevertheless, everything commercially available, is artificially produced from cereal crops.
It has a higher glycemic index than most other sugar alcohols and so is not as useful for diabetics though still safe if consumed in moderation.

Maltitol is a sugar alcohol (a polyol) used as a sugar substitute. It has 75–90% of the sweetness of sucrose (table sugar) and nearly identical properties, except for browning. It is used to replace table sugar because it is half as caloric, does not promote tooth decay, and has a somewhat lesser effect on blood glucose. In chemical terms, maltitol is known as 4-O-α-glucopyranosyl-D-sorbitol.

【Uses of Maltitol Crystalline】
It is very often uses in processed foods as a sugar substitute. For example 'sugar free' chocolate is often sweetened with Maltitol. 【Benefits of Maltitol Crystalline】
