Chemical PropertiesNisin is white color powder with hydrous potency 1000IU/mg. It is stable in room temperature and acidity condition even heated. It can endurance 30 min in pH=2.0 121 and 15 min in pH=3.0 121 . But at the high pH, the stability of activity can be greatly affected.

Application of Nisin

Nisin can be used in a wide range of heat-processed foods. These include: fresh milk, processed cheese and other dairy products, pasteurised liquid egg, processed meat, seafood, canned food, fruit drinks, plant protein drinks, baked products, instant food, beer, wine ect. It can also be used as a preservative in gelatin processing, cosmetics, drugs and health products.

 

Usages method of NISIN

The recommended dosage of NisinPro is in the range 20-500mg per kg or litre of food. Exact dosage can not be stated as it depends on the nature of the product for which it is intended. NisinPro should be added to heat processed foods by thorough dispersion in the food substrade prior to the heating process. NisinProcan be added directly to the food as a dry powder or as a  pro-suspension in water or milk. In certain processing situations there may be potential for adding NisinPro by other methods, such as dipping or after a fermentation process, e.g. stirred yoghurt. Advice should be sought for these more specialized food application areas.

Is NISIN safe?

Nisin is non-toxic and the producer strains of L. lactis are regarded as safe (food-grade); there is no apparent cross-resistance in bacteria that may affect antibiotic therapeutics; and it can be quickly digested into amino acids by enzymes in human intestines and stomach.
